This super simple Copycat Chipotle Corn Salsa recipe tastes JUST like Chipotle! White corn, fresh lime juice, onion, cilantro, jalapeño, and salt are all you need to whip up a batch!

I go through a love affair with Chipotle every once in awhile but since I've started making this Copycat Chipotle Corn Salsa, I'm happy to get my fix at home most days. While traveling full-time in 2018-2019, Chipotle became an easy and reliable meal option for Alex and I on driving days - we RV'd so we were moving a lot.
I adored their corn salsa, it was sweet and fresh and went perfect with the cilantro lime rice and sofritas. Alex and I still talk about how good the chips were in Nebraska, I guess it makes sense since they're the corn state, ha! You'd think that they'd all be the same but those had something special.
One of my favorite things is to recreate dishes I've had out at home. Tweaking flavors until they just meet my memory of how the original bite tasted. It's not like this is the first copycat Chipotle corn salsa recipe on the internet but there is something I've noticed and it's that a lot of those recipes include ingredients that Chipotle doesn't use such as roasted poblano peppers, black pepper, or lemon juice. My recipe uses the exact same ingredients that the salsa from Chipotle has.
Each week I make a few salsas and pickled things to have on hand throughout the week. This corn salsa is always one of my favorites as is my Pico de Gallo! I hope you love it as much as I do, let's get to it!

Ingredients in Copycat Chipotle Corn Salsa
- white sweet corn - the key is to use white corn, it's a sweet corn that's milder than yellow corn. It's usually found in the frozen section so you'll want to thaw it before using. There's no need to cook the corn.
- red onion - minced
- jalapeño - minced
- cilantro -finely chop the cilantro
- lime juice - fresh, never bottled
- sea salt

How to make Chipotle corn salsa at home
No cooking required, this corn salsa is ready in a flash!
Combine all of the ingredients in a large mixing bowl
Gently mix until combined
Hint: If storing, be sure to give the container a shake every day to redistribute the lime juice that's settled to the bottom. This will help the salsa stay fresh as the top won't dry out.

- Roasted chili corn salsa - use roasted corn kernels instead of white and add in some roasted poblano peppers

Storage
Store the leftover corn salsa in an airtight container in the refrigerator for up to 5 days.

What to serve with corn salsa
Corn salsa goes great on burritos, burrito bowls, tacos, nachos, quesadillas, salads, hummus(!!), and with tortillas chips. It's also dreamy on a grilled cheese with avocado and chipotle mayo 😍
I also really like this corn salsa with soy curl tacos or nachos!

Copycat Chipotle Corn Salsa
Ingredients
- 2 cups frozen white corn thawed and drained
- ¼ cup minced cilantro
- ¼ cup minced red onion
- 1 jalapeño minced
- 3 tablespoons fresh lime juice
