Looking for deliciously sweet treat espresso drinks to brighten up your day? Look no further than this mouthwatering Vegan Cake Batter Latte recipe! This delightful concoction combines the comforting flavors of cake batter with the rich aroma of coffee, all while being completely plant-based.

Whether you prefer a hot coffee on a chilly morning or an iced latte to cool down on hot summer days, this recipe has got you covered. Get ready to indulge in a celebratory sip that will transport you to a world of sweet treats and creamy flavors, all without any animal products.

The vibrant hues of the sprinkles will make your latte visually appealing and remind you of the joyful experience of eating a birthday cake. For those hot summer days when you're craving a refreshing beverage, you can also enjoy this latte iced per the instructions below.

Most homemade cake batter latte recipes call for cake batter extract but I find that using a classic combo of agave syrup, almond extract, and vanilla extract does the trick in a semi-less processed way. You can substitute simple syrup for the agave if you have it on hand.

    Ingredients

    espresso machine dripping coffee
    • 2 shots of espresso or 1 cup of strong coffee - cold brew works great if you're making an iced latte
    • 1 cup of your preferred plant-based milk (such as almond milk, oat milk, or coconut milk)
    • 1 tablespoon of agave syrup
    • ½ teaspoon pure vanilla extract
    • ½ teaspoon of almond extract
    • Vegan chocolate syrup, for drizzling
    • Rainbow sprinkles, for garnish
    • Vegan whipped cream, for topping

    Instructions

    1. Prepare the espresso or strong coffee using your espresso machine or preferred brewing method. If using an espresso machine, make sure to follow the manufacturer's instructions for a smooth espresso extraction.
    2. In a saucepan, heat the plant-based milk over medium heat until it reaches a gentle simmer. Be careful not to let it boil, as it can scorch the milk and affect the taste. Once simmering, turn off the heat and add in the agave, vanilla, and almond extract.
    3. Add the hot espresso or strong coffee and stir gently to combine. Pour into a mug or a tall glass with ice for an iced latte.
    4. Top the latte with a generous dollop of vegan whipped cream, if desired. The creamy texture will add an extra layer of indulgence to your latte. Drizzle with chocolate syrup.
    5. Sprinkle rainbow sprinkles over the whipped cream for a fun and colorful garnish.

    Substitutions

    • Milk Alternatives: Feel free to experiment with different plant-based milks to find your preferred flavor and texture. Almond milk, oat milk, and coconut milk are excellent options that add their unique twist to the latte.
    • Flavor Boosters: Customize your latte by adding a shot of espresso for an extra kick of caffeine or increase the amount of almond extract for a stronger cake batter flavor. You can also play around with other vegan-friendly syrups like caramel or maple syrup to add a touch of depth and richness.
    • Nut-Free Option: If you have nut allergies, ensure you choose a milk alternative that is free from nuts, such as oat milk or coconut milk.
